I admit, I am not a huge pumpkin flavored “things” fan. I like the smell of pumpkin candles, but that’s about where it ends for me. It seems, though, that every year around this time, pumpkin stuff starts revving up and in an effort to relate to my fellow humans, I tried to come up with something that would both tickle my palate and please the pumpkin fans out there. I do love a good salad dressing, so I devised this one late night in my kitchen a couple weeks back and I actually can say with 100% honesty, that this is one pumpkin thing I do like, even if it pains me to admit after my long standing “hate” of all things pumpkin. My husband, who is a pumpkin fan said it is perfect. He described it as a mix of tangy and sweet.

I really like Spring Mix salad, so it added the right kind of zip to the salad I was having. What is great for this recipe is, it is pretty darn healthy. I did not add any extra sugar and the only sweetner in it is the naturally occurring ones from the apple cider and the small amount of Agave syrup.

Ingredients
  • 3Tbsp Pumpkin Puree
  • ½ Cup Apple Cider (the drink, not the vinegar)
  • ¼ Tsp Pumpkin Pie Spice
  • ½ Tsp Yellow Curry
  • 2 Tbsp Light Agave Syrup
  • 2 Tbsp Light Tasting Extra Virgin Olive Oil
  • ¼ C Rice Wine Vinegar
  • 1 Tbsp Cider Vinegar
  • 1 Pinch of Salt
  • 1 Pinch of White Pepper
Instructions
  1. Add the Pumpkin puree to a bowl.
  2. Add in the oils and vinegar and give them a good mix.
  3. Add in the seasonings and add more to taste.

This subject can be hard to discuss as it does entail a fair amount of vulnerability on my part. I am gonna get a little personal here and I think it is important that I do. Having a blog allows me to talk about things that I think are important to get people discussing it. Bladder leakage effects millions of women (and men) of all ages and for many reasons. For me, it is most likely brought on by Lyme. Lyme disease can effect nearly every system in the body and one way it effects me is by making my nervous system a little, well, “nervous”, and it doesn’t always allow me to hold my bladder very well sometimes. There is actually a running joke between my husband and I and it goes like this;

 

Me: “Guess what I did today?”

Him: “Pee your pants, again?”

Me: *giggles* “No, but…”

 

That’s how often it happens to me. I am glad my husband an I can joke about it, but in all reality, if it was anyone but him that knew, I would be mortified. (I guess everyone knows now, but Oh well) I make sure to empty my bladder before I go anywhere because I am terrified it will happen to me in a store or when I am out and about. I have often though of buying Depend but I, like most people, thought to myself, “Oh I don’t have it THAT bad.” I mean, when I do have an accident, it isn’t like my entire bladder empties, so I figured Depend was not made for someone like me. I am glad to have learned through this post and campaign that I am wrong and that many women around my age wear them for numerous reasons.

Another thing that kind of had me skeptical is the fact that I thought they were bulky and like a diaper. Depend is not a big bulky adult diaper. I went to the store out of curiosity and they really are not much thicker than the menstrual pads I wear and I suspect no one would even know I was wearing one.

I guess what I am saying is, there really is no shame in wearing them for bladder leakage protection. I have gotten to that point in my life where I care less what people think and more about my own comfort. I think I will give them a try and not feel like I need to be worried about it while out and about, especially when I am experiencing a “flare” of my symptoms.

A while back, I heard about something called oil pulling. I was intrigued by the concept. If you haven’t heard of it, this post will tell you my personal experience with it as well as how to do it so you can try it out yourself. I am a big believer in the benefits of oil pulling as I have had numerous dental issues in my life and this technique is both natural and beneficial and it is using one of my favorite natural healers; coconut oil.

What is Oil pulling?

 

Oil pulling is a technique that involves swishing around coconut oil for a certain period of time daily in order to reap the benefits of the oil’s natural ability to kill germs. Think of it like a natural mouthwash that helps your mouth feel and get clean. Oil pulling can also actually naturally whiten your teeth as well!

 

How Do You Do Oil Pulling?

 

First, place 1 tablespoon (when solid) of organic coconut oil in your mouth. Let it melt and swish it around like you would a mouthwash. You want to leave it in for about 15-20 minutes. This is because it needs some time to help break up the bacteria in your mouth and along your gum-line. After the time is up, spit it out. It should look sort of like milk when you do. This is because it will contain the bacteria and toxins that were released.

You don’t want to spit it in the sink as it can eventually clog up your system, so make sure you have a trash can nearby to spit into.

After you have spit, brush your teeth as normal and rinse well.

 

The Benefits of Oil Pulling

 

I have very sensitive teeth and I also have some that were starting to hurt as happens when you have some small cavities. I did the oil pulling for just a couple weeks and I noticed my teeth were a bit brighter, less sensitive and amazingly, the tiny aches I had in my mouth were almost non-existent. My husband has a large cavity in his mouth and did some oil pulling with me and it no longer hurts as much. This right here lets me know that this is very beneficial. I also noticed that my mouth felt cleaner than before. It was almost like a detox bath for my gums!

If you have a hard time imagining the swishing for 15 minutes, try doing it while you do something else to occupy your mind like reading the morning paper or watching a TV show. Coconut oil is thick, so it can take some time to get used to, but I think it is incredibly beneficial!

Unless you have been living under a rock, you probably know what a “Magic Eraser” is. I was skeptical years ago when I tried them out but within minutes, I realized why they were called Magic. They really do clean just about anything and they helped me get rid of stains and messes I wasn’t able to get rid of before but had been driving me up a wall.

One thing to keep in mind with Magic Erasers is, though, they are NOT Eco-Friendly, despite what you may have heard. This is simply because they are meant to be disposable and they contain some chemicals. However, they are NOT toxic either. While I prefer to use only Eco-Friendly products, I have yet to find a product that is to my standards and works as well.

In any case, here are some uses for magic erasers that you may not have known.

 

 

Rust. It really will take off rust on just about anything. Of course it takes a bit of elbow grease, but it works wonders!

Hard water spots- Works amazing on glasses!

Clean Your Shoes- You can use magic erasers to clean the rubber parts of your shoes.

Shine your silver- It works wonders on tarnished metal!

Tough stains such as nail polish- You can use it to get these stains of just about any surface, but use caution as it can also rub off finishes.

Sales Stickers- With a little rub and some water, your stuff will be sticker gunk free.

Child’s Wall Art- Magic erasers will take off many types of writing utensils such as pencil, marker and crayon. Again use caution as it will also take off paint.

Dry Erase Boards- If you have one that is looking dingy from too much use, make it new again with a magic eraser.

Grill cleaning- Remove baked on food and grease from grill grates as well as cooking utensils.

Stains on plastic storage containers- If you are like me and reuse your food storage containers and hate the orange stains left behind by tomato based sauces, try a magic eraser in them.

Money Saving tip:

Magic Erasers can be kind of pricey. Did you know there is a generic alternative? Magic Erasers are made fo something called melamine foam. It was originally developed as an insulator. You can buy large quantities of melamine foam on Amazon for as low as a quarter each!

Coconut oil is something that has been used for years in the “crunchy” world. However, it’s becoming more and more popular as the days go on. If there’s one thing you notice about coconut oil, it’s the price. It is quite expensive, but there are some ways to save, so stay tuned.

Amazon

One of the best and cheapest places to find coconut oil is on Amazon. You can even get the organic type of coconut oil for a reasonable price. One thing to remember about coconut oil is that a little bit goes a long way. I think I’ve had the same tub for almost 6 months now!

Aldi

I have found some of the most inexpensive tubs of coconut oil at Aldi. They get great deals on bulk items and are able to deliver those prices to their customers. I’m not sure how often Aldi has coconut oil, but it’s something to keep an eye out for when you do your weekly shopping. Also be sure to check out other discount stores like Grocery Outlet Bargain Market if you live in the region it’s stores are located. I have gotten it as low as $4.00 for a 16 oz jar.

Trader Joe’s

Trader Joe’s has a private brand of their coconut oil and it is usually the lowest at the smaller size if that is what you are looking for. It runs about $6 a jar.

Use it for Everything

If you’re using coconut oil for everything, then you don’t need to “waste” money on other household items. When I say you can use coconut oil for everything, I’m not exaggerating. You can use it for a moisturizer, for cream in your coffee, and even to brush your teeth. Coconut oil is anti-bacterial and anti-fungal, so it’s a great product to use on your body and around the house. (for a list of some ways you can use it, check out my post on Coconut Oil Uses)

Buy in Bulk

Anything you can buy in bulk will help you save money. When you head to Sam’s Club or any other big box retailer, look for coconut in bulk. Buying coconut oil at $15 a pop can get expensive. See if you can’t land two huge containers for under $25. Looking for that special deal will help you save a ton of money on coconut oil over time.

DIY Mozzarella Cheese Recipe

I wish I lived in the country and could have chickens, a huge garden and a few other animals. I dream of homesteading. For now, though, I am stuck in the city in a small apartment so I have to make the best of it. One of my favorite things to do is get creative when it comes to doing apartment homesteading and one way to do that is to make as much as I can homemade. I scoured the ‘net and books to come up with my own version of this mozzarella cheese recipe and tried a couple of different methods until I found the one that works for me.

To make the best cheese and have the best results, it is very important you use the right kind of milk. You do not want to use just any ol’ whole milk from the store as it is most likely ultra-pasteurized. The process of pasteurizing milk heats it up and it ruins it;’s ability to form the cheese correctly. You want the rawest milk you can get. By that I mean raw milk for the best results. If you do not have access to a farmer that can get you milk this way, the next best thing is just regular pasteurized milk. Just remember that most milk at the store are ultra pasteurized, so it is best to get your milk for this at a health food store or co-op. You also need full fat whole milk in order for this to form properly.

For this mozzarella cheese recipe, I used a microwave to get the cheese really hot, but it can be done with boiling water in a double boiler. I just did it this way because it really is easier and certainly quicker.

Let’s get started! Most of these items can be bought at health food stores, but if you are having trouble finding them, they are linked to the product online.

Here is what you will need to make Homemade Mozzarella Cheese:

1 Gallon of Whole Milk (NOT the ultra-pasteurized kind!)

1/3 Tsp Liquid Rennet (I used vegetable)

3/4 Cup lukewarm Water

1 1/2 Tsp Citric Acid

3/4 Tsp Kosher Salt

Digital Food Thermometer

Slotted Spoon

Clean, new Dish Gloves

Stainless Steel pot with a heavy bottom

Microwave-safe dish

1. Combine the liquid rennet with 1/4 cup of the lukewarm water. Do the same with the remaining water and the citric acid. Stir to dissolve.

2. Pour the milk into your pot. Over medium-low heat, bring it up to 55 degree F. Make sure to stir it lightly to keep it from scorching.

3. When you get the milk to 55 F, add in the citric acid water. Lightly combine but make sure it is well mixed in.

4. Bring the milk up to 91 F and add in the Rennet water. This is when the fun starts to happen and you should see the milk starting to curdle!

5. Do not stir the milk now. You want it to form correctly and mixing at this point could break the delicate curds. Watch your cheese very closely at this point.

6. Around 98 F, turn off the heat. You should be able to see the whey very clearly. It is the light yellow liquid. Take a slotted spoon and gently remove the curds and place them in your microwave safe bowl.

7. Place the curds in the microwave and heat on high for a minute and 10 seconds. Remove from the microwave with potholders. Put on your gloves and holding the cheese, drain it back into the pot. Fold the cheese once over on itself and add the salt (sprinkle it). Put the cheese back in the microwave for 45 seconds to a minute. Take it out, drain it and fold it over again. Do this as many times as it takes to remove as much of the liquid whey as possible.

8. You will know it is ready when it looks like melted cheese. It should have a stretchy feeling. You can leave it in a large ball or make smaller balls out of it. Place it in the fridge to cool and enjoy!

The Problem With Black and White Thinking When it Comes to Disability

 

I sometimes like to use my blog to write out my feelings and recently this is one thing that has been on my mind. There is a real problem with black and white thinking when it comes to disability. People think that if someone uses a cane, a walker, a wheelchair or any other assistive device that they must be unable to walk or function without it and if they can on occasion, they don’t “really need it”.

I am here to tell you this is a false belief. There is nothing wrong with a person using a device all the time if that is what they need, so I am not talking about that. I am however talking about the fact that I sometimes need to use a cane when I am out and about or a motorized scooter in the store. I have had people give me dirty looks because I walk from my car to the scooter and sit down. They seem to scoff at me because I “walked there just fine”. In their eyes, I am abusing it and whats tops it off, I am overweight, so therefore, I must be using it because I am lazy (that is a whole other post for another day).

There are MANY invisible illnesses out there. I can’t even begin to name them all. One of the hardest parts of having one of these illnesses is the fact that those who have it often feel like they have to be ready to explain themselves to the nosey and judgmental public (and sadly some people have to explain it to those close to them all the time) when they use these carts or a transport chair or a cane. For most people who don’t live with it, disability is either black or white. You either are fully disabled or you are fully able-bodied. This is just simply not true and assumptions such as these can really hurt.

Why do I use a cane or the motorized cart sometimes? I use them because I suffer from chronic pain and neurological symptoms such as vertigo as well as extreme fatigue. I have an invisible illness. I have Lyme disease.

I write this because I know that I shouldn’t care about what others, especially perfect strangers, think of me, but I can’t help but feel their stares, sighs and dirty looks. I am young. I look healthy. People assume that the way I look is a direct sign of how I feel. Anyone with an invisible illness knows this is not logical.

I also write this because next week, (September 8-14, 2014) is Invisible Illness week. There are millions of people living with an invisible illness. It is heart-breaking to know that so many people suffer from this sort of judgement and not only have to battle their own bodies, daily chronic pain, and other disabling symptoms and still also battle the stigma that they are faking it, making it up, “just depressed”, “just need a little more exercise” or can’t possibly be that disabled because you sometimes see them on a good day (and trust me, there are some good days for most people with an invisible illness.)

 

What can you do to help those with an invisible illness?

 

The next time you see someone who looks healthy get into a motorized cart at the store, walk with a cane on occasion, get out of their car and walk inside with a disabled tag or use a transport chair away from home, instead of judging them based on how healthy you perceive them to be, offer to help or maybe just even smile at them. I can tell you, having an invisible illness not only means the illness doesn’t show to most people, but it can also make you feel invisible to society unless there is judgement being passed.

You can also help by spreading awareness. With the Ice Bucket Challenge spreading awareness and helping to get donations for ALS, it is easy to see how just a little bit of awareness can mean a lot to those effected by an illness. Donate to a cause that helps those with an invisible illness get medical help, assistive devices, or does medical research. If you can’t donate, spread awareness on social media. Share this Post and the others I will be writing next week. The more people that know how invisible illness effects those that suffer, the more likely it is that this stigma will disappear and people will no longer feel the need to be ready to explain themselves while trying to get through the day.

Do you love coffee but are not sure what to do with those leftover K cups? Here are several uses for empty k cups!

#1. Crafts

There are some really cute crafts floating around in the name of K cups. Some of the best crafts involve emptying the cups and filling them with something that makes sounds (rice or noodles). Of course, you will want to cover the cup after you fill it with something like paper and a tight rubber band.

#2. Garden Starters

This is one of the most genius ways to use your empty K cups. Take out the coffee grounds and place fertilized soil and a seed within in the K-cup. Keep in mind that once the seed gets big enough, you will need to transfer it to the garden. However, this is still genius in many ways because you can actually reuse the cup for something productive.

#3. Craft Organizers

There have been many times when I have needed a small container just to put smaller craft items in. After using K-cups for my coffee and not having any use for them, I thought I might as well use them for my crafts. I’ve put buttons in the cups or used them to hold pins and needles. Really, anything small enough to fit has gone inside one of these cups.

#4. Christmas Ornaments

K cups are the perfect size to make into Christmas ornaments. You can remove the coffee and the lid and make them into a multitude of items.

- Cut out a picture the size of the K-cup top and use a crafting pin to put in the name and date.

- Cover the top of the K-cup with scrap paper and decorate how you’d like.

- Really, this is a K-cup project that is dependent on the creativity of the one making it.

Instead of throwing those K cups into the trash the next time you’re done with them, consider reusing them in some way shape or form.
