I hate to admit it, but I am living in a household that seems to be committing a crime of sorts; produce waste all.the.time. I wrote a post not too long ago about having a zero waste kitchen, but there are some habits that I have been having a hard time breaking and one of them is produce waste. Every 2 weeks when I clean out the fridge, I find myself throwing out produce; probably a couple hundred dollars worth a year, to be honest. It’s not only aggravating because it is literally money I am tossing in the garbage, but I think of how as a whole, we as a nation throw out so much food when there are places and people (some in our own country) that are literally starving. I got tired of it and decided to do something about it. Here is how I am solving the produce waste problem in my house.

How to Avoid Produce Waste

Make a grocery list and stick to it. Don’t just buy produce with no plans on how you will use it just because it’s habit or on sale because it’s in season. Creat a weekly meal plan and stick to it, only buying what you need in the exact amounts you need for the recipe.

Plan to buy produce a couple of times a week. Some produce goes bad so quickly, you will not be able to use it up fast enough should you run into a night where the dinner you planned to make can’t be cooked because you are shorter on time than you thought. To combat this issue, I hit the grocery store a couple times a week for ‘produce runs’. I make sure I come with a list and only buy those items, sticking only to the produce section of the store and then going directly to the counter to pay.

Freeze produce you have extra of. Even if you think you bought the right amount, it still happens that you have more than you actually needed. Instead of sticking the bag back in the fridge to get forgotten about, chop it up and freeze right away. Make sure to label the date you put it in and use it for everything from smoothies, to soups and casseroles.

Create a ‘Use First’ bin in your fridge. I use those organization bins you can buy for the fridge. They really help me keep things organized. With one of them, I turned it into a ‘use first’ bin so when my teenage stepdaughter comes home ravenous after a day at school, she knows that she can go to the ‘use first’ bin and make herself a snack or salad for her after school hunger. This is where I place things that are still useful but for whatever reason didn’t end up in the freezer.

Keep a running inventory of what you have before hitting the store and ‘shop’ your fridge first. When doing your weekly meal planning, shop your fridge first and plan those meals that will use the items in it first as well so the produce gets used up.

Chocolate Covered Apple Bites

Chocolate Covered Apple Bites- These cute little apples on a stick are perfect for fall parties and get togethers. They are super easy to make, too!

I made this recipe last year but didn’t get a chance to put it up until now. With apple season upon us, and the fact that I live in the state that apples are known to come from, I thought since we will be doing our annual apple harvesting from the local pick-your-own orchards soon that now was the perfect time to share this delicious concoction with you. These are perfect for upcoming holiday parties and would be excellent for Halloween as a semi-healthy treat. If you love apples as much as I do, you will love making these Chocolate Covered Apple Bites with your kids.

 

Chocolate Covered Apple Bites

 

To make Chocolate Covered Apple Bites, you will need:

 

Green apples, about 4 or 5 for a large batch

Wilton chocolate candy melts

Wilton White Chocolate Candy Melts

A melon baller

Lollipop Sticks

Tray to set them on as well as a sheet of wax paper

Small candies to decorate with if desired

 

How to Make Chocolate Covered Apple Bites:

 

1. Start by making small balls of apples, with or without the peel. This can take some practice, but you will get the hang of it.

2. Melt your chocolate candy melts either in the microwave by cooking for 30 seconds and stirring until completely melted or over a double boiler.

3. Take your lollipop sticks and push them into your apple balls. Dip them into the chocolate and place on a cookie sheet/tray lined with wax paper or parchment paper to dry.

4. Melt your white chocolate candy melts the same way you melted the chocolate ones. Drizzle over the top and add any candies you want to decorate with if desired. I didn’t do it with this batch, but I have done it with subsequent ones.

5. These should be refrigerated if they won’t be eaten right away and for best quality, they should not be made more than 24 hours in advance.

18 Healthy Portable Snacks for Teens and Tweens

I have teenagers. This means that I am pretty much almost always grocery shopping. Just when I think I have food in my cupboard, I look and it’s gone. With so many unhealthy options out there, it’s sometimes hard to find portable snacks that are perfect for my kids. I think like many of us adults, teens and tweens want a snack that they can take with them and much on while they walk home from school or right before they go to practice. I keep a running list of snacks that I can buy on the fridge and when I hit the store, I ask them what they want from the list so they can change things up and they aren’t taking the same snacks with them. They are welcome to add to the list as well, as long as it’s healthy. Here are 18 Healthy portable snacks for teens and tweens.

-Fruit that doesn’t need to be refrigerated such as apples, oranges or pears.

-Wonderful Pistachios. They come in packs that are perfect for sliding into a bag and are a mere 100 calories each. With 4g of protein, and only 5g of carbohydrates, these pistachios are a great snack. I like the classic Roasted and Salted, but there are other flavors like Sweet Chili and Salt and Pepper.

-Trail mix. Make your own and leave out all the candy for a healthier option.

-Popcorn. If it’s air popped, it can be a great thing to eat on the go. And, you get a whopping 3 cups per serving! Sprinkle on some Nooch for some added protein.

-Dried fruit. In huge amounts, it can add up to a lot of carbs, but dried fruit can also be a great snack that provides energy for teens on the go.

-Fruit Leather. Making your own is super easy. Check out my recipe for Blueberry Elderberry Fruit Leather.

-Energy Balls. You can make these yourself very easily. Here is a good list of energy ball recipes on Fit Foodie Finds.

-Seaweed. This may sound weird, but my 16 year old stepdaughter loves seaweed snacks. They are low calorie and provide some protein as well.

-Protein bars. These are great for the kid that does a lot of activity. Look for one with less sugar.

-Granola Bars. I like to make my own hemp and flaxseed ones.

-Tuna on crackers. If your teen likes it, pack a single serving pouch of tuna and crackers and they have a great protein snack on the go.

- Nut butter with apples. I like peanut butter with apples, but you could also do something like sunflower butter as well. Cut the apple up, and then put it back together and secure it with a rubber band so it doesn’t turn brown.

-Jerky; great for a good dose of protein and so easy to make at home. You can even make jerky without a dehydrator.

-String Cheese. This can be left out of a fridge for up to 4 hours. I like to get the light kind because it has less calories and it is a bit firmer.

-Roasted Chickpeas. These are great to pop like chips and they have a god amount of flavor as well. You can buy them or make them.

-Protein Smoothies. If you are at home before you head out for breakfast or to run to practice, make a protein smoothie before you go.

-Kale Chips. These are super simple to make yourself. Check out the recipe on Premeditated Leftover for Kale Chips.

-Chocolate Milk. Yes, that’s right. Chocolate milk is full or protein and a great snack for a teen on the go as long as they drink it right away. Look for the lower sugar kind.

 

While we are on the subject of teens on the go, something that comes to mind for me is backpacks. Did you know that there are many teens ion this country that have families that don’t quite make enough to buy them backpacks and school supplies and while many school supply drives exist, very few specifically help with school supplies for teens? It’s true! While it is also true that teens can get jobs and buy many of their own supplies to ease the financial burden on their family, that isn’t until they hit the age of 16 in most states and many teens are simply too embarrassed to ask their teachers or school for help.
