Diabetic Friendlier Heart Shaped Popcorn Balls

Ingredients
  • 12 cups of popped popcorn
  • 1 cup of corn syrup (3/4 Cup light Agave Syrup + ¼ Cup water)
  • ⅔ cup sugar (2/3 Cup Splenda or ⅓ cup Truvia Baking Blend)
  • 1 small box of red Jello (Sugar free)
Instructions
  1. Put all popped popcorn in a larger bowl than you think you will need. It should be more than the amount of popcorn you have. This is important because you will need to have room to mix.
  2. In a saucepan, add jello, sugar,and corn syrup, then mix. Let mixture boil slowly on medium.
  3. Once the mixture is boiling and starting to foam, drizzle entire mixture over popcorn and stir quickly with a non stick spray coated spoon
  4. until all popcorn is covered. The mixture gets pretty sticky as it cools, so it is important to mix fast.
  5. Take a small portion about the size of your palm and shape it into a heart.
  6. Wrap the hearts in wax paper until ready to serve, or, if serving immediately, place them separately on a serving dish, spacing them out so they don’t get stuck to each other.
