Tacos al Pastor in the Crock Pot

Ingredients
  • 1 10-12 lb Pork Shoulder
  • 1 Cup Orange Juice
  • 1½ Cups Water
  • 2 Cups of Fresh Pineapple Chunks
  • 1 Cup Pineapple Juice
  • 2 Tsp Chilli Powder
  • 1 Tsp Chipotle Powder
  • ½ Tsp Onion Powder
  • ¼ Tsp Garlic Powder
  • 1 Tsp Kosher Salt
  • 1 Tsp Paprika
  • 1 Tbsp Brown Sugar
Instructions
  1. Mix together in a bowl: 1 tsp Chili powder, ½ tsp Chipotle powder, ½ tsp onion powder, ¼ tsp garlic powder, 1 tsp paprika, 1 tsp kosher salt and 1 Tbsp brown sugar to make a rub.
  2. Apply the rub to your pork shoulder and place in the fridge for approximately 6 hours.
  3. Remove your pork shoulder and place in your crock pot. Pour your liquids over the top and add in the rest of your spices.
  4. Cook on high for 4 hours and turn down to low for 2-3 more hours until pork reaches an internal temperature of 165 F.
  5. Serve with the toppings of your choice and corn tortillas.
Notes
Toppings that are good are:
red onions, cilantro, tomato, black beans, crumbling cheese like Queso Fresco and sour cream.
