Slow Cooker Chicken Enchilada Casserole

Fall is really upon us1 Just last week it seems that we were still getting temperatures in the 70s and 80s and suddely, here we are in the 40s and 50s and almost freezing at night. This is the time of year that I love cooking! No more worrying about heating the house up with it. Itā€™s also a busy time as well and that means my crockpot/slow cooker really comes in handy. I came up with this recipe after really craving enchiladas, but not wanting to put the work in that they require. This recipe is so easy you can do the work in less than 4 minutes and let the slow cooker do the rest. Slow Cooker Chicken Enchilada Casserole

To make Slow Cooker Chicken Enchilada Casserole, you will need:

1 Large can of Enchilada Sauce

3-4 Chicken Breasts

10 Corn Tortillas

1 Can of Corn

1 Can of Green Beans

1 1/2 C Shredded Cheddar Cheese

Sour Cream and Diced Tomatoes for Topping

 

Start by placing your chicken into your slow cooker. You can place it directly on the bottom of the pot. Turn your slow cooker on to HIGH for 3-4 Hours.

Cover your chicken breasts in the can of enchilada sauce, cover with lid and allow to cook.

After 3-4 hours, check your chicken. It should be at 165 degrees in the middle. If it has reached that temperature, take two forks and carefully (as to not splash sauce all over) shred it in your slow cooker. Replace lid and turn down to LOW.

Stack your tortillas on top of each other and cut into 4ths.

Add in your tortilla pieces, corn, beans and 1 cup of cheese. Mix it in well.

Cook for approximately 2 more hours on LOW. Check to make sure your food is at temp (165 degrees) and then top with remaining 1/2 cheese. Cover with lid and allow cheese on top to melt.

Dice your tomatoes. You can also top with salsa, green onions or even black olives. Whatever you like!

Scoop out and serve! Enjoy!

This recipe should not be made with flour tortillas because they will become too soupy. You can also try adding a bit of cooked white rice when you add in the rest of the ingredients if you donā€™t like the consistency. It will help absorb some of the moisture.
