# Recipe Diabetic Friendlier Mashed Potatoes

As a woman with a wee touch of Irish in me, I long for anything potato. I love mashed potatoes, especially. Since I have Type 2 diabetes, this is usually a no-go, unless I wanna torture myself with a very small portion that is more like 2 tablespoons full. I decided there had to be a way I could have some of my favorite side dish and came up with this lovely way of making mashed potatoes more diabetic friendly. Now, I can make them just as easily as I did before and they taste amazing!

To make Diabetic Friendly Mashed Potatoes, you will need:

  • 1 Package of frozen cauliflower
  • 5-6 red potatoes
  • a 1/4 cup shredded cheese
  • 1/4 cup dried chives
  • 2 teaspoons salt
  • 1/2 tsp pepper
  • 1/4 cup milk
  • dash of garlic powder
  • dash of onion powder

 

1. Start by quartering the red potatoes. I leave the skin on for texture as well as nutrients. Rinse them and place in a pot to boil for 15 minutes.

2. Place the contents of one bag of frozen cauliflower in a separate pot of boiling water. Allow to boil until potatoes are done and they are mushy in texture.

3. When potatoes are soft and cauliflower is ready, drain.

4. Here comes the fun part! Using a hand masher (I use a smood), mash the potatoes and cauliflower together.

5. Add milk and cheese and continue to mash until a nice paste forms.

6. Add in seasonings and dried chives. Serve!

 

This is a more diabetic friendly way to eat this dish because cauliflower is being supplemented for half of the potatoes in a normal recipe and since it is low on the glycemic index, it will mean you can have an extra helping, if you like.

You can top with gravy, but I just eat them plain as I do with most mashed potatoes. I think this would make an excellent dish to add to your holiday or any-day dinners!
