I have teenagers. Currently, just one lives here, yet it seems that with everyone’s schedule we rarely get a chance to have a family meal since we are all going different directions all at once. For me, this means any meals I do make when we happen to all be here have to be fast, healthy and of course, delicious. Since I am on a protein rich diet due to diabetes as well as my workout schedule, I am always trying to alter recipes to make them higher in protein and lower in fat and carbs and we are a family of comfort food lovers, so this can present itself to be quite a challenge. That’s when I came up with this idea for chicken salad sandwich wraps in lettuce.

I also love to cook seasonally, so since it is fall in Washington state where I live, apples are obviously my first pick for something seasonal. What better way to use them than to make delicious chicken salad?

Our family eats a lot of chicken since it’s a lean source of protein and I am always on the lookout for a brand that I can trust that also fits my personal values and is, of course, affordable. I love that Foster Farms has a new line of chicken called Foster Farms Simply Raised Fresh Chicken that is American Humane Certified, all-natural with no antibiotics ever and is farmed right here in the Pacific Northwest and CA. And since they partner with local farmers, I know that the chicken was brought to the store within 48 hours so it’s fresh.

As I said before, meal times are often hard for us to get together for, especially dinner, but we can usually get lunch in, at least on the weekends, so this low fat, protein-rich chicken salad sandwich wrap is the perfect thing to make in a flash. I changed things up a bit and substituted plain Greek yogurt instead of mayo, almonds instead of walnuts (for cost as well as being higher in protein) and added pears in for a little bit of extra sweetness. I also skipped the bread and opted for lettuce.

One tip: If you want to make this even faster, cook (poach) and cut your chicken ahead of time. I often keep some on hand in my fridge for quick meals such as this and cook large batches on the weekends to freeze and refrigerate for later.

Low Fat Protein-Rich Chicken Salad Sandwich Wraps

To make Chicken Salad Sandwich Wraps you will need:

1 Cup Plain Greek Yogurt

2 C Chopped Foster Farms Simply Raised Fresh Chicken Tenders (cooked)

1 Medium Gala Apple

1 Medium Bartlet Pear

1/4 Chopped Almonds

Green Leaf Lettuce for Wraps

Seasonings:

1/2 Tsp Nutmeg

Pinch of Pink Salt

Pinch of Pepper

Paprika

How to Make Chicken Salad Sandwich Wraps:

  1. Chop your pears and apples into small cubes about 1/2 big. I like to leave the skins on for texture and color.
  2. Add Foster Farms Simply Raised Fresh Chicken to a bowl. Add the Greek yogurt in and mix.
  3. Add seasonings except for paprika and mix.
  4. Throw in almonds and mix well.
  5. Add your pears and apples and mix well.
  6. Take a leaf of lettuce and add 1/2 cup to 3/4 cup of mixture to it and secure with a toothpick if desired. Sprinkle on Paprika for color and enjoy!
