Let me start off by saying I am not a vegan. I am not even a vegetarian. However, I did discover one day that vegan baked goods are pretty amazing. They are more moist and to me, they have a lot more flavor to them. I have been trying to cut some animal fats from my diet (and admidittedly not doing a splendid job of it) and I got the opportunity to try making some egg-less, dairy free vegan waffles when my stepdaughter had a friend spend the night a few weeks back because she is a vegan.
I figured waffles would be an easy thing to make as there are egg and dairy alternatives that are low cost to use in place. Little did I know that I would be coming up with the very best waffles I had ever had in my life! These were so moist and fluffy, no one would even know they are vegan! So if you want to try your hand at them, for whatever reason, whether it be allergies or you are vegan yourself, give this vegan waffle recipe a try and tell me what you think!
By the way, I added raspberries to this recipe and it was amazing! I have also tried it with fresh blueberries and it was just as good.
Vegan Waffle Recipe (AKA The best waffles you will ever have!)
Ingredients for Vegan Waffles:
4 Cups All Purpose Flour
4 Tbsp Baking Powder
4 Tbsp Sugar
3 1/2 C Soy milk
1 11/2 tsp Salt
1 Tbsp Vanilla extract
To make Vegan Waffles:
Turn your waffle griddle on and get it warming up.
Mix flour, baking powder, salt and sugar together.
Add in milk and vanilla extract and stir. It will be a little lumpy, but that’s OK.
If you want to add fresh berries in at this time, fold them in. I used a pint or about 1 solid cup.
Add to waffle griddle (amount depends on the size of your griddle) and wait to enjoy!
